Bison and Blueberry Burgers

  • 1 pound
    ground bison
  • 1/2 cup
    blueberries, chopped fine
  • 3/4 cup
    chopped fresh cilantro
  • 1/2 cup
    finely chopped red onion
  • 1/3 cup
  • 2 teaspoons
  • 2 teaspoons
    chili powder
  • 1 teaspoon
    dried oregano
  • 1 teaspoon
    lime juice
  • 1/3 cup
    plain Greek yogurt
  • 1/2 cup
    gluten free/dairy free cheese, shredded
  • 1 cup
    shredded collard greens
  • 4 slices
  • whole wheat or gluten free rolls
  • thin slices red onion
    salt and pepper to taste
  1. Pre-heat grill to medium/high heat.
  2. Combine bison, blueberries, 1/4 cup cilantro, onion, scallions, garlic, chili powder, oregano, salt and pepper in a large bowl. Mix well. Form into 4 patties.
  3. Combine the remaining cilantro, Greek yogurt and lime juice in a small bowl.
  4. Place the burgers on the grill. Cook for about 7 minutes each side. Top with cheese and cook until it is melted.
  5. Assemble burgers onto buns; top with cilantro Greek yogurt spread, collard greens, tomato and onion.
  6. Enjoy!
