  • 2 cups
    cucumbers, chopped
  • 1 cup
    yellow pepper, chopped
  • 1 cup
    cilantro, roughly chopped
  • 1/2 cup
    sweet butter pickles, roughly chopped
  • 4 slices
    smoked ham, thinly sliced
  • 1/4 pound
    pulled pork
  • 1 tablespoon
    Dijon mustard
  • 1 tablespoon
    olive oil
  • 1 tablespoon
    apple cider vinegar
  • 2 teaspoons
  • avocado, mashed
  1. Dijon Dressing: Whisk last 4 ingredients together.
  2. Layer remaining ingredients over lettuce and drizzle with Dijon dressing.
