Floating Islands Recipe
Ingredients:
- 1 1/4 cups skim milk
- 3 eggs -- separated
- 2-3 drops vanilla extract
- 1 pinch cornstarch
- Ground cinnamon to taste
- No-calorie sweetener (aspartame, etc.)
Preparation:
1. Mix egg yolks with the sweetener and beat until well blended; add the
cornstarch. Heat the milk; add the vanilla extract.
2. Remove from heat and add the milk to the egg yolks. Return the mixture to
the heat, stir with a spatula and simmer slowly until the mixture thickens
(stop cooking when the mixture coats the spatula).
3. Filter the mixture and pour into 4 individual dishes. Before adding the
stiffly beaten egg whites, add 1 pinch salt. Add sweetener to taste.
4. With a tablespoon, place egg whites in a pan of very warm water, and cook
for 1 minute on each side. Strain and distribute egg whites evenly on each
custard dish. Sprinkle with cinnamon and serve very chilled.
