Luscious Leeks

4 large
leeks, cut into 1 inch pieces

4 large
ripe tomatoes

1 tablespoon
freshly squeezed lime juice

1 tablespoon
freshly squeezed orange juice

2 tablespoons
coconut oil
- In a large pot over medium heat, steam leeks for 7-10 minutes or until soft.
- In a food processor, combine tomatoes, coconut oil, lime and orange juice; process until smooth.
- Remove from heat; transfer to a serving bowl.
- Serve leeks warm or at room temperature with fresh tomato sauce mixture.
