Minty Zucchini and Blueberry Soup

  • plum tomatoes
  • 2 large
    zucchinis, chopped
  • 1 cup
    freshly squeezed orange juice
  • 2 cuos
    fresh blueberries
  • 1/2 cup
    fresh mint, finely chopped
  • 1 teaspoon
    sea salt
  • 1/4 teaspoon
    balsamic vinegar
  • 1/4 teaspoon
  • 1 clove
    garlic, minced
  • ripe avocado, peeled, pitted and chopped
  1. Combine all ingredients in a food processor; pulse until smooth.
  2. Transfer to a large bowl, covered.
  3. Store in the refrigerator until ready to serve.
  4. Serve chilled. Enjoy!
