  • red bell peppers, sliced
  • green bell peppers, sliced
  • Vidalia onion, sliced
  • 2 medium
    yellow squash, sliced
  • 2 tablespoons
    extra-virgin olive oil
  • 1 tablespoons
    balsamic vinegar
    salt and pepper, to taste
  1. Preheat grill to medium heat.
  2. Combine all ingredients in a large bowl; gently toss to combine. Place in the fridge for 10 minutes to marinate.
  3. Transfer to grill; cook for 10-15 minutes.
  4. Remove from grill; serve warm. Enjoy.
