  • 4 large
    heirloom tomatoes, diced
  • ripe avocado, peeled, pitted and diced
  • scallions, finely chopped
  • 1 teaspoon
    balsamic vinegar
  • 1/4 cup
    fresh cilantro, finely chopped
  • fresh mint leaves, finely chopped
  • 1/6 teaspoon
    sea salt
  • 1/8 teaspoon
    freshly ground white pepper
  1. Combine all ingredients into a food processor; pulse on low speed for 30 seconds.
  2. Remove from food processor; transfer to serving bowl.
  3. Serve with tortilla chips, crudités or gluten-free crackers. Use as a topping for salads, tacos, omelets, fish and tofu dishes. Enjoy.
