Why not try something a little different the next time you get a yearning for guacamole? Squash blossoms have a wonderful flavor to them and unlike most recipes, these aren’t dipped in batter and fried like Tempura -- mashed with the rest of the ingredients their silky flavor adds a zing to the entire dish.

  • 1 pinch
    saffron threads
  • ripe avocados, peeled and pitted
  • squash blossoms
  • 2 tablespoons
    lime juice
  • 2 tablespoons
    lemon juice
  • 1 teaspoon
    lime zest
  • 1/2 cup
    red onion, chopped
  • 1/4 cup
    fresh parsley, chopped
  • 3 cloves
    garlic, minced
  • 1/2 teaspoon
    chili powder
  • 1/2 teaspoon
    apple cider vinegar
  • 1 dash
    sea salt
  • 1 dash
  1. Toast saffron threads in a frying pan.
  2. Mash in a mortar and pestle.
  3. In a medium sized bowl, mash avocados with saffron and squash blossoms.
  4. Fold in remaining ingredients.
  5. Serve chilled.
