Squash Blossom Guacamole

Why not try something a little different the next time you get a yearning for guacamole? Squash blossoms have a wonderful flavor to them and unlike most recipes, these aren’t dipped in batter and fried like Tempura -- mashed with the rest of the ingredients their silky flavor adds a zing to the entire dish.

saffron threads

ripe avocados, peeled and pitted

squash blossoms

2 tablespoons
lime juice

2 tablespoons
lemon juice

1 teaspoon
lime zest

1/2 cup
red onion, chopped

1/4 cup
fresh parsley, chopped

3 cloves
garlic, minced

1/2 teaspoon
chili powder
-
1/2 teaspoon
apple cider vinegar
-
1 dash
sea salt
-
1 dash
pepper
- Toast saffron threads in a frying pan.
- Mash in a mortar and pestle.
- In a medium sized bowl, mash avocados with saffron and squash blossoms.
- Fold in remaining ingredients.
- Serve chilled.
