Should you remove the meat from the bones before storing the leftover
I would, because you want the turkey to cool to the proper temperature and then
stick it as quickly as possible into the fridge. If you have a long drive, come
prepared with some type of cooler with portable ice blocks, a way to keep it
cool as you drive.
Could you give us five great ideas for using leftovers?
- Soups, stews and chowders are great at this time of year. Diced turkey can
be added instead of other meats.
- I love to use shredded turkey in place of chicken in Mexican recipes, like
enchiladas, quesadillas, and tamales.
- You can use shredded turkey in your favorite pasta dish, like turkey
- You can use shredded turkey in a turkey Caesar salad or a turkey spinach
salad or some type of entree salad.
- Lastly, a great way to make a breakfast omelet or frittata is by throwing
in some turkey. It goes in well with green onions, avocado, veggies,
reduced-fat cheese, and fat-free sour cream.

final words for us, Elaine?
Some people think Thanksgiving shouldn't be lightened, but I beg to differ,
because if you can make these changes and still enjoy the dishes, you feel less
loaded down after the meal, and it helps those people with medical conditions
that need to eat light to stay comfortable, like people with IBS, acid reflux,
or diabetes. So have a healthy, happy Thanksgiving, everyone.
And don't forget to add flax seed to your holiday recipes!
