Warm Winter Vegetable Salad

  • parsnips
  • sweet potato
  • celery root
  • 2 small
  • red onion
  • 1 tablespoon
    white balsamic vinegar
  • 2 tablespoons
    olive oil, divided
  • 1/2 tablespoon
    Dijon mustard
  • 1/4 cup
    feta, crumbled
    salt and pepper, to taste
  1. Pre-heat oven to 425° F.
  2. Cut all veggies in about 1 inch pieces. Place in roasting pan and toss with one tablespoon olive oil, salt & pepper. Roast veggies, stirring occasionally until veggies start to brown, about 30-40 minutes.
  3. Whisk other tablespoon of olive oil, vinegar, Dijon and salt & pepper together. Drizzle over veggies and top with feta cheese.
  4. Eat warm or at room temperature.
