LIZZIE
Buenos dias, everybody. Guess what. We're going Mexican for lunch today. On this episode, we're going to cook up a delicious and nutritious lunch that's super easy and fun. It's time for Turkey Taco Wraps.

I'm here with my friend Jason, and we're making a midday meal that's really easy for kids. It's better than the same old turkey sandwich we usually get and also full of fresh ingredients.

Before we start, if you look out on the counter, you see all the fresh ingredients we're going to use. But what don't you see that usually goes with a Mexican dish?

JASON
Hmm.

LIZZIE
Need a hint?

JASON
Mhm.

LIZZIE
Well, here's one. It starts with a T and rhymes with "see ya."

JASON
Tortilla?

LIZZIE
Right. These tacos have no tortilla shells. Instead, we use lettuce, like this big leaf lettuce right here. This is a nice big leaf of Boston lettuce, rinsed and ready to go.

Lettuce like this is great as a wrapper, instead of fried taco shells or soft tortillas, because parents always ask me how to make a healthy lunch that's low in carbohydrates. And of course, you can make this using a tortilla. But if you do, I suggest you buy smaller ones. There are some really massive tortillas on the market these days. I happen to have one hidden right here as an example. You just don't need all of that. My tortilla rule is that if it's bigger than your face, it's too much.

Now back to our lettuce wrap. So we're going to take a piece of lettuce. Then we're going to put on one slice of turkey-- I prefer all-natural deli turkey breast-- on top of your lettuce. For all you vegetarians out there, instead of turkey, you might try using avocado slices or some fresh veggies.

The next layer is a slice of provolone cheese, or a sprinkling of shredded cheese. If you use 2% milk cheese, all the better. You can use soy cheese too, if you have allergies or don't use dairy.

Next, we're going to add black beans like these. Earlier, we opened up a can of beans, which we rinsed, dried, and then placed in the bowl. We need about 1/4 cup for this recipe. Go ahead.

Remember, always make sure there's a grown-up in the kitchen with you whenever you use a can opener or cut things. To top it off, we have some all-natural salsa to liven up your taco with flavor and color.

So now we have a pile of turkey and cheese and everything. But do you think it looks like a taco yet?

JASON
No, I don't think so.

LIZZIE
Well, here we go. What's great about these Boston lettuce leaves is that they become the shell. Not only are they colorful and crunchy, but they're big and strong. So you just slide your hand under the edges and fold them up, just like a taco. Try it. See how easy that is?

JASON
Mhm.

LIZZIE
Adios, amigos. Mm, that's good. How do you like it?

JASON
It's good.

LIZZIE
Mhm.
