1. Peel the onion and slice off about a 1/2 inch from the pointed non-root end.
  2. Turn over and place on work surface cut side down.
  3. Make 4 evenly-spaced cuts all the way through to the cutting board.
  4. Cut 4 more evenly-spaced cuts all the way through for 8 total sections.
  5. Repeat again until you have 16 sections.
  6. Carefully open up the petals with your fingers and place the onion in a large bowl.
  7. In a medium bowl, whisk together the flour, chili powder, paprika, cumin, garlic powder, and salt.
  8. In a large bowl, beat together the eggs, milk, and water.
  9. Pour the flour mixture over the top of the onion making sure it reaches into all the crevices and petals. You can top with a plate and shake to make sure it's completely coated.
  10. Remove from the flour mixture and shake off any excess.
  11. Add the onion into the egg mixture. Turn the onion around in the liquid to make sure it's coated.
  12. Use a spoon if necessary to get the egg wash into the crevices. When coated, let the excess egg mixture drip off and add the onion back into the flour, again sprinkling and shaking to make sure all the petals are coated.
  13. Remove from the flour bowl and spritz lightly with non-stick spray.
  14. Preheat your air fryer to 356 degrees for 2 minutes.
  15. Spray the basket with non-stick spray and carefully add the onion.
  16. Cook for 14 minutes, or until golden brown.
  17. Use a flat spatula to carefully remove from the fryer basket and serve immediately.
