1. Preheat oven to 400 degrees.

  2. Line a large rimmed baking sheet with parchment paper and spray generously with cooking spray.

  3. Add the flour to the wet ingredients, then sprinkle the baking powder, baking soda, and salt over the flour. 

  4. Stir gently with a rubber scraper until just combined, but make sure not to overmix.

  5. Pour batter into the prepared pan and spread evenly. Sprinkle with fruit.

  6. Bake for 15-20 minutes until lightly golden brown on top and a toothpick inserted into the center comes out clean.
