Saliva in human beings does more than just keep our mouths from drying out. It also keeps our mouths clean and lubricated, it’s a part of the digestion process, and it protects the teeth. Saliva is produced by salivary glands. Saliva consists of 98% water but also includes electrolytes, minerals, proteins, and enzymes. The enzymes help break down foods in the beginning of the digestion process, and the lubrication function of saliva makes it easier for food to be swallowed.
