Just an FYI- pictures on Google images have elderberry confused with poke berry. Elderberries are arranged like the flower on Queen Ann's lace... broad umbrella shape. Poke berries grow pendulously around a center stem.

Juice from cutting pokeweed caused a bad rash on my arms.I don't think I will eat any.

As a child, we boiled the young leaves and ate them as spinach (after pouring the water off and re-boiling 3 more times). It has a wonderful flavor. My husband's family used to chop the stalks, fry and eat as okra. There are many old wives tales about it.
